MANDARIN ORANGE SALAD
60 Ritz Crackers - finely crushed
1/4 pound butter - melted
1/4 cup sugar
1 - 6oz can unsweetened frozen orange juice - thawed
1 - can sweentened condensed milk
1 - 8oz container cool whip
2 - small cans mandarin oranges - drained
Mix crushed crackers, melted butter and sugar together.
Reserve some of the mixture for a garnish.
Press firmly into a 9 x 13 baking dish.
Blend together the orange juice, condensed milk then fold in cool whip and oranges.
Pour mixture over the crumb crust and top with garnish of remaining crumb misture.
Refrigerate for a minimum of 1hour longer is better.
ZUCCHINNI PIE
3 Cups zuchinni (grated or chopped)
1 cup Bisquick
4 Large Eggs
4 ounce glass of vegetable oil
1/2 cup of grated parmesean cheese or to your taste
1 large mild onion chopped
salt & pepper to taste
Mix all ingredietns together. Pour into 10-inch deep dish pie pan, or 13 x 9 pan.
Bake at 350 degrees 45 - 60 minutes or until set and brown on top.
